Trehalose is the key

I have had a feeling to eat a sushi lunch for five days. Ideally I want to go to a Japanese supermarket to but a sushi lunch box at a reasonable price. Fish is so-so here and they have one of the best sushi rice in our town. It is not to sweet and very fresh even I but to-go lunch boxes. They use trehalose, a different type of sugar and it plays a role of natural preservative to keep sushi rice quality. I heard this from another sushi shop in town.
